Состав, который сегодня считается классическим: взбитые сливки, наломанная меренга и клубника двух видов — нарезанная кусочками и протёртая в однородный соус. Касательно происхождения этого десерта есть разные версии. История довольно запутанная. Что можно сказать наверняка: сегодня Eton mess неразрывно связан с Итонским колледжем — знаменитой частной школой для мальчиков, основанной ещё в XV веке. Eton mess в Итоне подают на ежегодном крикетном матче против учеников другой школы — Хэрроу, такой же известной и почти такой же древней. Согласно одной из версий, блюдо «родилось» случайно как раз на одном из подобных турниров, ещё в конце XIX века. В качестве угощения был приготовлен вполне аккуратный торт из меренги, взбитых сливок и клубники, но его уронили. И решили: не пропадать же добру. Эта версия выглядит стройно, но не подтверждена документально и оттого больше походит на гипотезу, однажды кем-то придуманную.

Доподлинно известен другой факт: в 1930-х годах в школьном буфете Итона предлагался десерт, который мог послужить прототипом современной «итонской мешанины». Он состоял из клубники или бананов, смешанных с мороженым или сливками. Меренги в нём не было, и можно предположить, что она добавилась позднее.

В третьей версии фигурируют лабрадор и пикник. Собака села на пудинг из меренги, сливок и клубники (что-то вроде «Павловой»), превратив его в руины. Далее известный сценарий «не пропадать же добру». Эпизод предположительно имел место в те же 1930-е, что делает его неправдоподобным. Потому что десерт под названием Eton mess на тот момент уже давно существовал.

В Итоне учились многие известные люди — реальные и вымышленные. С одной стороны Итон — элитное учебное заведение. С другой, это синоним устоявшихся традиций. Для тех, кто может себе это позволить, отправить сына в Итон — определённый стандарт. Вполне вероятно, что у нынешнего абитуриента там учились и отец, и дед, и прадед. И нет ничего удивительного в том, что Итонский колледж подарил Великобритании 19 премьер-министров. Это говорит не столько о качестве образования, сколько о той самой традиционности и элитарности. Сначала Итон, потом Кембридж (или Оксфорд), потом восходящая карьера в выбранной сфере — накатанная дорожка. Не говорю, впрочем, что в Итоне плохо учат — просто ценят его не только за это. Выпускников Итона называют «старыми итонцами», и это, в некотором роде, особая каста.

У Стивена Фрая в автобиографической книге «Дури еще хватает» есть любопытные рассуждения на эту тему:

Поучиться в нем было бы неплохо, но, с другой стороны, меня, вероятно, вышибли бы оттуда намного раньше, и кто знает, какие преступные гнусности я совершил бы, обзаведясь галстуком «старого итонца» и лживыми, как у шпиона, повадками?

Но не менее интересно взглянуть на вымышленных выпускников Итонского колледжа — литературных персонажей. Любопытная получилась бы компания, соберись они вместе. Вот список тех, кого вы, вероятно, знаете:

Some of my favorite desserts are those of contrasting textures like my deconstructed banana cream pie. Something about the crunch and the creamy I just can’t get enough of.

I also can’t get enough of heavy cream, in any form. So naturally, I love Eton Mess. Eton mess is made up of a soft luscious whipped cream with strawberries, and crushed meringues swirled throughout.

Who invented Eton mess?

Legend has it that Eton Mess was born at Eton College, England during a cricket match. The three ingredients were accidentally messed up together, creating Eton Mess.

How do you make Eton mess?

This dessert is easy, you can make your own meringue cookies or use store-bought, then chop some strawberries and sprinkle with sugar and a squeeze of lemon juice. Let the berries sit and get extra juicy. Then gently fold the berries into softly whipped cream and then fold in crushed meringues.

I like to serve extra crushed cookies and remaining strawberries on top just for an extra pretty look. The layers are so beautiful to me!

Can you whip cream by hand?

Of course but expect a workout! I find it easiest and quickest to use my stand mixer, but a handheld mixer also does a great job. Of course, you can use a whisk and your arm strength to make whipped cream too!

How do you macerate strawberries?

In a medium bowl add the diced strawberries, toss them in the lemon juice and granulated sugar. Let them sit for 30-40 minutes at room temp or let them sit in the fridge for 3-4 hours.

This will help draw the juices out of the strawberries. If your berries are extra tart you can increase the caster sugar a little to create more sweetness

How do you assemble Eton Mess?

While the berries are resting make the whipped cream. We want a soft whipped cream. In the bowl of an electric mixer or large bowl with a hand held mixer beat the heavy cream and powdered sugar for a couple of minutes until you reach soft peaks. You do not want to beat too much, we want softly whipped cream.

Gently fold the strawberries and liquid into the whipped cream then crush the meringue cookies and fold into the mixture. Serve with extra strawberries and meringue crumbles, if desired.

Keep in mind meringue cookies will take a while to bake in the oven, so prepare ahead of time.

Can you make Eton mess in advance?

Totally, the meringues can be made a few days in advance. You can also make the macerated strawberries and softly whipped cream a few hours in advance, just store them separately and assemble them right before serving.

The true story of Eton Mess – and how to make the perfect one

The question, it turns out, isn’t ‘why’ it’s called Eton Mess, but whether it’s actually called ‘Eton Mess’ at all.

The generally-accepted story is that the strawberry, meringue and cream pudding was dropped at an Eton v Harrow cricket match in the late 19th century.

Rather than waste the food, it was simply scooped up off the floor and served, smashed to bits, in individual bowls.

There is an alternate version, involving a labrador and a picnic in the 1930s. That one, however, can’t be true – the first record of the name in print dates to 1893.

But there is yet another take on the ‘Eton Mess’ conundrum which comes from a 2012 cookbook of recipes popular at the famous public school, and with those who once went there.

Among the ‘gems’ in The Eton Cookbook, compiled by Caroline Waldegrave and Sandra Robinson, were Boris Johnson’s recipe for cheese on toast (‘grill until it gets all nice and scabby’), Sir Ranulph Fiennes’s for chocolate sauce, Bear Grylls weighing in with Huckleberry Chocolate Pie, actor Eddie Redmayne’s slow-cooked Italian lamb, MP Tam Dalyell’s West Lothian Porridge and the Duke of Kent’s fish soup.

But Eton Mess was tackled by former Tory minister William Waldegrave, who also took on the issue of how ‘Eton Mess’ got its name – and he declares that it doesn’t actually exist.

‘Whenever I find “Eton Mess” on the menu, I become irritable and pedantic. “There is no such thing!” I cry,’ said Waldegrave.

‘There is such a thing as a Strawberry Mess, and such a thing as a Banana Mess and very good they were, too.’

Waldegrave’s hopes of convincing the rest of the world to stop calling strawberries, cream and broken meringue ‘Eton Mess’ are, of course, as vain as his hopes of returning to high office – or, indeed, of the people of Bologna convincing the English that ‘Spaghetti Bolognese’ should be called ‘Spaghetti with ragu’.

But Waldegrave can keep his hands off claiming ‘Banana Mess’ – that is generally credited to a similar culinary disaster at Lancing College, on the south coast near Worthing.

How to make perfect Eton Mess

For the meringues

Whisk the egg whites until they form soft peaks. Add the caster sugar gradually and continue to whisk until thoroughly mixed.

Place rounded spoonfuls of the mixture on a lined baking tray and bake for an hour at 275°F. Leave the meringues to dry out overnight.

Chop half the strawberries and put them in a blender with the icing sugar. Blend until smooth and sieve to remove the seeds.

Chop the rest of the strawberries and whip up the double cream. Break up the meringues into about one-inch pieces, put them in a mixing bowl, add the strawberries and fold the cream in around them.

Gently fold in all but 2tbsp of the puree to give a marbled effect. Place the mixture in a serving dish and spoon the rest of the puree over the top.

Serve immediately. Preferably without dropping, and away from excitable labradors or irate former ministers of state.

What is an Eton Mess?

For those of us who are not cock-eyed optimists an Eton Mess is a political ‘snafu’ headed up by a bunch of Bullingdon Club toffs who persuade us to take a referendum on our membership of the European Union. Then once we, the ignorati, have made our decision they all bail out, leaving us with no idea of what to do or where to go. It is rather like General Eisenhower dropping the allied troops on the Normandy beaches on D Day and then saying, “Well lads, here we are. Berlin is… er… that way. Off you go!”

For others of an epicurean nature an Eton Mess is a traditional English dessert made of strawberries, bananas or other soft fruit mixed up with pieces of crushed meringue and cream… and very nice it is too, particularly at a time of record temperatures.

‘Pavlova’ is named after the legendary Russian ballerina Anna Pavlova. When she visited New Zealand in 1926 during a world tour a chef in Wellington created the dessert in her honour.

By custom Eton Mess is served at the Eton College v. Harrow School cricket match which is played at Lords in June. This year’s match on Saturday 25 th June was the 176 th in the series. Cricket fans might like to know that excluding fixtures during the First and Second World Wars, of the 175 matches in the series played between 1805 to 2015, Eton have won 58 and Harrow have won 52, with 67 matches drawn. Isn’t that interesting?

Another meaning of ‘Mess’ is a small group of people (usually four) who sat together at banquets and were served from the same pots and dishes. This gave rise to the Army and Navy ‘Mess’ where meals are served and eaten. In the Inns of Court in London members still dine in groups of four. Parents of young children know of a more general meaning of ‘Mess’ when applied to meals.

Summer should be the season for fresh fruit and cold treats. Sadly the British summer often doesn’t cooperate, giving us the same grey clouds and drizzly days we get in other seasons.

Still it’s our summer and we make the best of it, which brings me to the best of British classics, Eton Mess.

Admittedly, I messed with the original quite a bit. Traditionally Eton Mess is a combination of fresh strawberries, cream and meringue pieces artfully thrown together.

But there are plenty of traditional recipes on the internet, so why write another one! Also, blackberries are fantastic to experiment with and bring something really special to a dessert like this one.

We happen to live a short walk away from a copious amount of wild blackberry bushes and we try to take advantage of them every August. The proof is in all the blackberry recipes on my blog!

We try to make the most of blackberry season and gather enough to keep us going all year long. They freeze very well and are a great addition to so many desserts and drinks.

Blackberries inspired me to make my own version of the classic Eton mess. Although the ingredients are different, it has the same mix of creamy, sweet and summer freshness of the original recipe.

Ice cream Eton mess

It’s delicious and impressive but essentially it is a fancy Ice Cream Sunday. I made my own pistachio ice cream but feel free to use a store bought version.

What I absolutely love about Eton Mess is how easy it is to prepare since all the ingredients can be bought. All you have to do is to assemble before serving or better yet present it as a buffet, so everybody can build their own!

Just make sure you don’t make it in advance. If the dessert sits too long the meringue pieces will lose their crunch, so best to assemble right before eating.

Pistachio ice cream

Pistachio ice cream is one of my families favourite flavours. We discovered it on one of our trips to Italy and now buy it every chance we get.

Sadly it is never quite as amazing outside of Italy. Every other time we tried pistachio ice cream it looked the part but its cloying sweet and artificial taste was only sub par.

It turns out it’s not very easy to extract as much flavour from pistachios as Italians seemed to master, so the only way is to cheat. This ice cream recipe is quite possibly the easiest you can find.

It’s no-churn and only has 5 ingredients-whipping cream, sweetened condensed milk, Italian pistachio paste, a pinch of salt and chopped pistachios. I bought my pistachio paste at Marks & Spencer but if you don’t live in the UK you can easily find a similar product on Amazon or in Italian delis.

The Eton mess recipe is for two people, but you will have a lot of the pistachio ice cream left over. Store any extra ice cream in an air tight container in your freezer.
